Fruit MoChi | A Natural Flavor from Kinds of Fruit

Ingredients

- 80g red bean

- 200g glutinous rice flour

- 100g tapioca starch

- 180 ml water

- A little bit of salt

- 100g sugar

- 1 banana, 4 strawberries, 1 kiwifruit or kinds of other optional fruits

Procedure:

Step 1:

- Put the red beans in a pressure cooker and pour approximately 1 liter of water in and cook them until they are soft. Then allow it to cool.

- Next pour the cooked red beans with its own water into a blender to grind.




- After finishing, pour them in a pan, add 80g sugar and a little bit of salt to the ground bean part. 


- Then cook them with small fire until they are thick as image below (*Note: stir them constantly while cooking).




Step 2:

- Cut the banana into 4 equal pieces, remove stalk of the strawberries, finally cut the kiwifruit in half.




Step 3:

- Divide the red bean mixture into different parts, then wrap the kinds of fruit in them. As you can see, after finishing, we will have the red bean block as the image below.




Step 4:

- Put 200g glutinous rice flour, 20g sugar and a little bit of salt in a pan and add 180 ml water to it. Then stir well the mixture until the ingredients are mixed together. 

- Next switch on the stove and cook the mixture until they are thick as the image below. (*Note: stir the mixture constantly while cooking.)





Step 6:

- Put the 100g tapioca starch in an another pan to roast it (*Note: roasting time is approximately 5 minutes with small fire.




Step 7:

- Now, prepare a clean surface and put roasted tapioca starch part on there to make a non-stick layer, then put the mixture of glutinous rice flour on and knead it thoroughly. Next use a rolling pin to flatten the mixture part, then divided it into small pieces as image below. 




Step 8:

- Wrap the red bean blocks that was made in the "Step 2" in the glutinous rice flour pieces to make outer shells for our dish. Finally, we only need to cut them in half, then enjoy.

Baked Coconut | A Great Flavor Is Difficult to Forget

- 130g grated coconut 

- 3 eggs

- 10g wheat flour

The first way: You can buy a fresh coconut and use a Coconut grater or a Fork to make the grated coconut. (If you do not have any information about the Coconut grater, you can search it on Google). You can also learn more about how to grate coconut via this Youtube video.



- After grating, you bring the grated coconut part outdoor to dry or can also put it into oven or microwave to dry. However, when drying it by the oven or microwave, you should pay attention to drying time so that it is not brunt.

The second way:  You can also buy "Ready-Made Chopped Coconut" at supermarkets or searching for it on Google).


Procedure:

Step 1:

- First, take the egg white of three eggs and put all of them in a bowl, then use an egg beater to beat them until they have small bubbles as the image below. 



- Next add 40g sugar to the bowl of egg whites and continue to beat them until they become cream. After the egg white part are smooth, put a little bit of salt in and continue to beat them one more time.





Step 2:

- Put 10g wheat flour in bowl of egg whites and use a spatula to mix them together. Then continue to put 130g grated coconut in the mixture and mix well. Just like that, do the same thing until the grated coconut part is out of. (*Note: do not put all the grated coconut in at once).




Step 3:

- After mixing, divide the mixture into small circular blocks and finally, you only need to put them into an oven and bake within 20 minutes with temperature of 170°C (338°F).

Egg Wrapped in Basa Grilled Chopped Fish

Basa Grilled Chopped Fish (Chả Cá) is a common from Vietnam. Its main ingredient is basa fish which is ground and marinated with a lot of different spices to become a very delicious dish which many people who like. Today, I am going to show you to use this ingredient to make a great dish that I am sure that, you will like it. Let's start to make!





Ingredients

- 200g ground basa fish

- 50g wheat flour

- 50g bread crumbs

50g crispy flour

- 6 eggs

- A few scallions

- 1/2 carrot

- 1 shallot

- 2 chillis

Spices: 

- 1/2 teaspoon seasoning powder

- A little bit of pepper - sugar - chilli powder

(*Note: the amount of ingredients above is only standard numbers so you can adjust them to be suitable for your meal.)

Ingredients Processing

 - Chop the scallions, shallot, carrot and chillis up into small pieces.

Procedure:

Step 1:

- Marinate the ground basa fish with 1/2 teaspoon seasoning powder, a little bit of pepper, sugar and chilli powder. Then add the scallion, shallot, carrot and chilli pieces to the ground basa fish part. Then mix well and marinate it about 15 minutes so that the spices are infused.

(*Note: You can add ground shrimp and cuttle to the basa fish part to increase flavor for this dish).



Step 2:

- Boil 4 eggs in 5 minutes. (*Note: when boiling the eggs, you should wait for the water to boil, then put them in pot. This will help the eggs to be not cracked when boiling.

- After boiling, put the eggs into a bowl of cold water and soak them in 5 minutes, then peel shells.

Step 3:

- Roll 4 eggs over a layer of the wheat flour.


 - Then surround the eggs with a layer of the ground basa fish as the image below.



Step 4:

- Next crack two remaining eggs in a separate bowl, and the crispy flour and bread crumbs also put them in two separate bowls.

- Then dip the basa fish blocks into the ingredients in the order of the crispy flour eggs and bread crumbs to make a crisp layer for the dish.

- After finishing, switch on the stove and fry them with small fire until they have yellowish brown as the image below:

Adorable and Delicious Baked Green Bean Filling “Hedgehog”

Ingredients

- 150g wheat flour

- 100g green beans (*Note: this ingredient is to make filling for this dish, you can also use "almonds" instead).

- 160g sugar (*Note: divide 160g sugar into two parts, each part is 80g sugar)

- 30 ml cooking oil

- 1 egg

- Some black sesame seeds

- A little bit of salt

- 1.5 ml vanilla extract = (1/3 teaspoon vanilla)

Procedure:

Step 1:

- Soak 100g green beans in water about 4-5 hours then wash. After soaking, put all the green beans into a pot and pour approximately 0.5 liter water in and cook them until they are soft and the water inside the pot is no longer. Then allow it to cool.




Step 2:

- Next put 80g sugar into a blender to blend it. After finishing, put the blended sugar part into a sifter to sieve it in a bowl.


- Next crack an egg into the bowl of blended sugar, then use an spatula to mix well them. 

- Next sieve 150g wheat flour through a sifter in the bowl of mixture, then knead the mixture until it is smooth as the image below. Finally, use a piece of food wrap to cover up the bowl and let it in 15 minutes.




Step 3:

- Start to make the filling for this dish. First, put all cooked green bean part into a bowl, then add the remaining 80g sugar, a little bit of salt and 1.5 ml vanilla extract to the bowl of green bean, then pour approximately 70 ml water in and blend them thoroughly. 


- After blending, pour all the green bean mixture in a pan and cook it with small fire until it is slightly dry. Then pour 30 ml cooking oil in the mixture and stir well it for a while. Finally, switch off the stove.


- After finishing, divide the green bean mixture into small circular blocks as the image below.



Step 4:

- Divide the block of wheat flour that was prepared in the "Step 2" into small parts.Then wrap the green bean blocks in these parts of wheat flour. After finishing, they will have looked like the image below. 

(*Note: if you use the almonds to make filling for this dish, you can put them in the middle of the wheat flour parts directly that do not need to grind them.)

Step 5:

- Next use a scissors to make spines of hedgehogs as the image below.

- After finishing, you can use black sesame seeds to make eyes for the hedgehogs or other suitable ingredients.


Step 6:

- So, our product is almost finished. However, before putting our products into oven, we have to spread a layer of mixture on the surface of the hedgehogs. It will make our adorable hedgehogs more eye-catching after finishing.

The mixture will include the following ingredients: 

- 1 egg

- 1 tablespoon honey

- 1 tablespoon water.

How to make:

- First, crack an egg into a bowl, next pour 1 tablespoon honey and 1 tablespoon water into the bowl of egg, then mix well. 

(*Note: After finishing, you should re-filter the mixture through a sifter to remove all scums in it).

Step 7:

- Use a basting brush to spread a thin layer of the mixture on the surface of the hedgehogs. 

- Finally, we only need to put our products into the oven. However, you remember to turn on the oven for 5 minutes before putting them in. After the oven is heated, put our products into the oven and bake them within 10 minutes with temperature of 170°C (338°F).

Thus, we have just finished a delicious dish and its appearance is extremely adorable. I am sure that, your children will very like these adorable hedgehogs.

Baked Green Bean Cake | A Delicious and Sweet Flavor

Ingredients

- 200g green beans

- 25g unsalted butter

- 200 ml coconut milk

- 25g sweetened condensed milk

- 180g sugar

- 50g wheat flour

- 70g tapioca starch

- 2.5 ml vanilla extract = (1/2 teaspoon vanilla)

- 160 ml whipping cream


Procedure:

Step 1:

- Soak 200g green beans in the water approximately 4-5 hours then wash them. 

Step 2:

- Put the green beans into a pot and pour a moderate amount of water in it to cook the green beans as the image below. While cooking, it will appear scums on surface, therefore, you can use a ladle to take those scums out of the pot.



- Cook the beans until all the water inside the pot is out of as the image below, now switch off the stove and allow it to cool.




Step 3:

- Use microwave to melt 25g unsalted butter.

Step 4:

- Put cooked green beans into a bowl and use a hand blender to grind them. Next add 20 ml coconut milk, 25g sweetened condensed milk and 180g sugar to the green bean part. Then blend the mixture thoroughly.



- At this moment, our mixture will be sightly liquid, next use a sifter to sieve 50g wheat flour and 70g tapioca starch into the mixture, stir well and then continue to blend them.



- After finishing, pour 2.5 ml vanilla extract and 25g melted unsalted butter in the mixture and stir well. 

- Then add 160 ml whipping cream in, stir well, then blend the mixture one more time.



Step 5:


- Filter all the mixture through a sifter in a bowl. 




Step 6:

- Next prepare a bakeware and use a basting brush to spread a layer of cooking oil inside the bakeware. Then pour all the mixture into the bakeware. (*Note: when poured all the mixture in the bakeware, you remember to use hand to raise the bakeware and then drop it slightly to have no bubbles inside the cake).




Step 7:

- Finally, you only need to put our product into oven and bake it within 50-60 minutes with temperature of 150°C (320°F).

So, we have just finished a delicious and nutritious dish. It is very soft and has a extremely attractive flavor.

Unique and Delicious Chicken Thigh Wrapped in Rice

Ingredients

- 700g chicken thigh

- 500g rice or glutinous rice

- 80g wheat flour

- 1 egg

- A few shallots

Spices: 

- 1 teaspoon seasoning powder

- A little bit of sugar

- 1 teaspoon sesame oil

- 1 teaspoon soy sauce

- 1/2 teaspoon pepper

- 1/2 teaspoon chili powder

Ingredients Proccesing 

Cut the shallots into thin slices.

- Cut the scallions into small pieces.

Procedure:

Step 1:

- Wash 500g rice and put them into a cooker to cook. You can adjust standard water level for cooking rice which usually fluctuate between 2.5 cm and 2.8 cm. However, this can also be changed due amount of the rice or different kinds of the rice, so you can change the water level to be suitable for you.





Step 2:

- Use a fork to make small holes on the chicken thighs, this will shorten frying time.


- After finishing, put all the chicken thighs in a bowl and marinate them with 1 teaspoon seasoning powder, 1/2 teaspoon pepper, 1/2 teaspoon chili powder, a little bit of sugar and 1 teaspoon sesame oil, then mix well. 

- Next, use a piece of food wrap to cover up the bowl and marinate them within 30 minutes.

Step 3:

- Pour a small amount of cooking oil in a pan to stir-fry the shallots slices with small fire so that they are not brunt. After they have had good smell, take them out of the pan.

- Next, add a large amount of the cooking oil to the pan (approximately half of the pan) to fry the chicken thighs (*Note: fry them with small fire.)





Step 5:

- When the rice is ready, put it in a bowl and allow to it cool. Then crack an egg into the bowl of rice, next add 1 teaspoon soy sauce and a little bit of wheat flour to the rice part, then mix well.



Step 6:

- Line a clean piece of clean nylon to a flat surface. Then put a part of cooked rice in there and use a spoon to make it a thin rice layer. (*Tip: lining a piece of nylon will help you to wrap the chicken thigh in the rice layer easily). Next put the scallion pieces and stir-fried shallot slices in the middle of the rice layer.

- Then put the remaining part of wheat flour in a plate and roll the chicken thighs over a layer of the wheat flour.

- Continue to put the chicken thigh in the middle of the rice layer, then wrap it in the rice layer as the image below.

- So, it is done and now you only need to put a pan on stove and fry them with big fire until they have yellowish brown.
